Twice a year, during Fashion Weeks, the fashion pros travel to New York, London, Milan, and Paris. The latest trends on the runway are in the center of their attention. But there is also a lot going on beside the catwalks. Of course there are shops, pubs, and hotels in these big cities that are committed to sustainability - and the cool crowd just loves them. We would like to introduce you to our favorites.
One of the most environmentally friendly houses in the city. A significant percentage of the hotel is made of recycled materials - from the wooden tiles that used to be installed in a distillery in Kentucky to the industrial lamps. Rainwater is collected to water the plants in the house, and much of the energy is generated from wind power. The casually designed rooms have floor-to-ceiling windows, the mattresses are made of hemp and an hourglass runs in the shower to remind guests of water consumption. From the pool on the roof terrace, you have a fantastic view of the Brooklyn Bridge and Manhattan. And those who are exhausted after an intense day in the city, can be massaged with products on a natural basis in the in-house Bamford Haybarn Spa (double room from approx. 300 €, www.1hotels.com/brooklyn-bridge).
Farm or roof terrace to Table! The Italian restaurant in the West Village cultivates most of the ingredients for its cuisine on its own roof terrace, with the rest coming from Hudson Valley Farm. The atmosphere is lively and rustic, with tiled floors and wooden tables. Particularly popular on the lunch menu are Pannini and Focacce (18 Greenwich Avenue, www.rosemarysnyc.com).
Star chef Jean-Georges Vongerichten also serves sustainable cuisine: in his vegetarian bistro AbcV in the Flatiron District, all the ingredients come from small, local farms that cultivate according to ecological principles. Casual vegetarian coffee place with West-Coast-feeling in Soho. The menu includes delicious bowls such as the "Rainbow Bowl" with lentil falafel, green cabbage, and cauliflower. Favorite among the desserts: Avocado vanilla Panna Cotta. Great: A part of the turnover is donated to the organization "The Door" against youth poverty (137 Sullivan Street, www.westbourne.com).
